When done right, stretching in Karate doesn't only improve your flexibility.
You instantly correct your posture, improve your ability to handle stress, and improve your health in general.
Stretching must be functional too.
When you're working to improve the range of motion of your hamstrings, pecs, hip flexors or any other body part, it must be done in a functional manner, i.e. translating directly into how you would perform your Karate techniques in actuality.
